Premium Bacon Apple Quiche

10-12 slices bacon
1 medium diced onion
1 diced baking apple
Pie crust…deep dish
2 cups grated Monterey Jack cheese or 1 cup monetary 1 cup Swiss
1 tsp fresh chopped thyme
1 tsp fresh chopped marjoram
1 tsp nutmeg
1 tsp cinnamon
6 eggs
1/2 cup cottage cheese

Fry bacon until crisp, set aside on paper lined plate to drain. Fry onion and apple in 2tbsp reserved bacon fat until light brown. Set aside. Chopped or crumble cooled bacon. With fork, prick the bottom of the pie crust. Evenly sprinkle cheese on pie crust. Layer bacon, onion and apple, thyme and marjoram on cheese. In a bowl mix the eggs, cottage cheese and nutmeg with whisk until smooth. Pour on pie and sprinkle with cinnamon.
Bake in preheated 350 degree oven for 50-60 minutes or when set. Cool slightly before serving.

The thin cut bacon at Premium Sausage is ideal for this quiche. It crisps up nicely and you can use our Maple Flavoured or Regular Bacon. I use the regular as some people might not like the Maple flavour with the quiche. Try both and see what you prefer.

Premium Sausage Spaghetti Bake

1 coil Premium Sausage, sliced
1/2 box or approximately 450 gm of spaghetti, cooked according to package directions
1 medium onion, chopped
1-2 cloves garlic to taste, minced (remember Premium Sausage has garlic in it as well)
1 tbsp olive oil
1 medium green pepper, chopped
1 cup sliced mushrooms
1/2 tsp Premium Seasoning  (or seasoning salt)
Pepper to taste
1 can (28 ounces) crushed tomatoes
1/2 cup red wine
1/4 cup water
1/2 cup chopped fresh basil
1/2 cup chopped fresh oregano
1 cup grated cheddar or mixture of mozzarella and cheddar

Over medium heat in a large pot or Dutch oven, cook sausage, onion and garlic in olive oil. Cook until onions are tender. Add peppers, mushrooms, Premium Seasoning and pepper. Stir and cook for another 5 minutes. Premium Sausage is a very lean sausage so do not have heat on high. You may need to add a small amount of water or olive oil if it is too dry. Add tomatoes, wine, water and fresh herbs. Simmer uncovered for 20 minutes. Stirring occasionally. Keep heat on medium or low to maintain a simmer. Add prepared spaghetti to mixture and toss evenly. Place half of mixture in a greased 2 1/2 quart baking dish. Spread half of the grated cheese on top, repeat with last layer of sausage and spaghetti mixture and the other half of the cheese. Bake, covered at 375 for 20-25 minutes. Casserole should be bubbling. Uncover for the last few minutes .
Serves 4-6 people

I use Premium Sausage for this recipe however our Mennonite Sausage would work as well. You may want to increase garlic if using Mennonite Sausage as it doesn’t have any garlic in it. This recipe calls for our Premium Seasoning and it is our special blend of seasoning salt. Premium Seasoning contains no MSG and it is gluten free. It is available in our store.

Premium Sausage Bacon Stuffed Apples

  • 1 link Premium Sausage No Garlic
  • 1 small onion, diced
  • 6 Royal Gala apples (other apples can be used but these work the best)

  • 1/2 cup apple cider

1. Preheat oven to 350* F. Cut bacon in half inch pieces. Fry in large pan until crispy. Remove from pan.

2. Peel and dice 1 apple and dice onion. Cut sausages into disks and then quarter each disk. In bacon fat fry sausage, fully browned. Add onions and fry until translucent. Once translucent add apples, nutmeg and apple cider. Season with salt and pepper to taste and add grainy mustard. Let mixture cook down until apples have gone soft and most of the cider has reduced. Turn off heat and stir in bread crumbs and crispy bacon. Set aside.

3. Cut off the tops of the remaining apples. Using a spoon, scoop out the middle making sure you remove core. Leave a thin layer of apple all the way around so the apple is fairly sturdy. Stuff with sausage mixture. Bake for 15-20 minutes until the outer apple has softened.
