INGREDIENTS
1 coil Premium Sausage, sliced
1/2 box or approximately 450 gm of spaghetti, cooked according to package directions
1 medium onion, chopped
1-2 cloves garlic to taste, minced (remember Premium Sausage has garlic in it as well)
1 tbsp olive oil
1 medium green pepper, chopped
1 cup sliced mushrooms
1/2 tsp Premium Seasoning (or seasoning salt)
Pepper to taste
1 can (28 ounces) crushed tomatoes
1/2 cup red wine
1/4 cup water
1/2 cup chopped fresh basil
1/2 cup chopped fresh oregano
1 cup grated cheddar or mixture of mozzarella and cheddar
INSTRUCTIONS
Over medium heat in a large pot or Dutch oven, cook sausage, onion and garlic in olive oil. Cook until onions are tender.
Add peppers, mushrooms, Premium Seasoning and pepper. Stir and cook for another 5 minutes. Premium Sausage is a very lean sausage so do not have heat on high. You may need to add a small amount of water or olive oil if it is too dry.
Add tomatoes, wine, water and fresh herbs. Simmer uncovered for 20 minutes. Stirring occasionally. Keep heat on medium or low to maintain a simmer.
Add prepared spaghetti to mixture and toss evenly. Place half of mixture in a greased 2 1/2 quart baking dish. Spread half of the grated cheese on top, repeat with last layer of sausage and spaghetti mixture and the other half of the cheese.
Bake, covered at 375 for 20-25 minutes. Casserole should be bubbling. Uncover for the last few minutes.
Serves 4-6 people
I use Premium Sausage for this recipe however our Mennonite Sausage would work as well. You may want to increase garlic if using Mennonite Sausage as it doesn’t have any garlic in it. This recipe calls for our Premium Seasoning and it is our special blend of seasoning salt. Premium Seasoning contains no MSG and it is gluten free. It is available in our store.
