INGREDIENTS
6 strips Premium Sausage bacon
1 link Premium Sausage No Garlic
1 small onion, diced
6 Royal Gala apples (other apples can be used but these work the best)
1 tsp nutmeg
1/4 cup bread crumbs
1 tbsp grainy mustard
1/2 cup apple cider
INSTRUCTIONS
Preheat oven to 350* F. Cut bacon in half inch pieces. Fry in large pan until crispy. Remove from pan.
Peel and dice 1 apple and dice onion. Cut sausages into disks and then quarter each disk. In bacon fat fry sausage, fully browned. Add onions and fry until translucent. Once translucent add apples, nutmeg and apple cider. Season with salt and pepper to taste and add grainy mustard. Let mixture cook down until apples have gone soft and most of the cider has reduced. Turn off heat and stir in bread crumbs and crispy bacon. Set aside.
Cut off the tops of the remaining apples. Using a spoon, scoop out the middle making sure you remove core. Leave a thin layer of apple all the way around so the apple is fairly sturdy. Stuff with sausage mixture. Bake for 15-20 minutes until the outer apple has softened.
Serves 6 people.
Serve with side salad and enjoy!
