INGREDIENTS
10-12 slices bacon
1 medium diced onion
1 diced baking apple
Pie crust…deep dish
2 cups grated Monterey Jack cheese or 1 cup monetary 1 cup Swiss
1 tsp fresh chopped thyme
1 tsp fresh chopped marjoram
1 tsp nutmeg
1 tsp cinnamon
6 eggs
1/2 cup cottage cheese
INSTRUCTIONS
Fry bacon until crisp, set aside on paper lined plate to drain. Fry onion and apple in 2tbsp reserved bacon fat until light brown. Set aside. Chopped or crumble cooled bacon. With fork, prick the bottom of the pie crust. Evenly sprinkle cheese on pie crust. Layer bacon, onion and apple, thyme and marjoram on cheese. In a bowl mix the eggs, cottage cheese and nutmeg with whisk until smooth. Pour on pie and sprinkle with cinnamon.
Bake in preheated 350 degree oven for 50-60 minutes or when set. Cool slightly before serving.
The thin cut bacon at Premium Sausage is ideal for this quiche. It crisps up nicely and you can use our Maple Flavoured or Regular Bacon. I use the regular as some people might not like the Maple flavour with the quiche. Try both and see what you prefer.
